Make Ahead Breakfast Burritos – Supper for a Steal

Make ahead breakfast burritos are a great solution to crazy mornings. As a nursing mom I am hungry and if not fed I get HANGRY!! I have never been one for large breakfasts, but now a days I find myself stuffing my face at nine o’clock. My old standby of fruit and Greek yogurt just doesn’t cut it. I need food and lots of it. So I decided to make up a few batches of breakfast burritos to keep in the freezer.

 Clearly we are a Mexican food loving family. Honestly I could eat tacos and burritos for breakfast, lunch, and dinner and I think some days we have. You know why? Because they are easy. And we like easy in this house. These take a bit of time to assemble so I suggest setting a few hours aside and prepping a bunch of these and Chicken and Black Bean Burritos to fill your freezer. You will be thanking me on those days you just don’t feel like fixing anything for anybody.

To make these healthier: I added a vegetable in the form of red peppers, but I think you could add even more -onions,  spinach, tomatoes, mushrooms – anything you would add to an omelet, I think, would make a good addition to these burritos.

Ingredients
  • 1lb breakfast sausage
  • 2 cups frozen hash brown potatoes
  • ½ red bell pepper, chopped
  • 6 eggs
  • 2 tablespoons milk
  • salt and pepper
  • 1½ cups shredded cheese
  • 8 whole wheat tortillas
Instructions
  1. Cook the sausage in a large skillet over medium high heat. When fully cooked remove from skillet with a slotted spoon and set aside in a large mixing bowl.
  2. Add potatoes and red bell pepper and cook in sausage grease for 10 minutes until browned. Remove to bowl with sausage.
  3. Whisk eggs together with milk, salt, and pepper. Scramble over medium heat until firm. Add to bowl of sausage mixture. Let cool slightly then mix all together. Mix in cheese and spoon approximately ⅓ cup mixture into each tortilla, roll up like a burrito – sealing all the ends, wrap in waxed paper, place in freezer bag and freeze until ready to use.
  4. Microwave on high 1.5-2 minutes.
