Today is day 15 of our Whole30! Halfway done, woo hoo!
I didn’t take pictures of every meal I made last week, so obviously I don’t remember what we ate. But it went a little something like this: chicken, beef, vegetables, fruit, repeat.
I have to admit I’m getting a little bored. I’m trying to be creative, but sometimes that takes too much effort and I fall back on grilled chicken and vegetables. I am craving more variety in my diet and I’m trying to accomplish this with a plethora of different vegetables, but it just isn’t quite cutting it. I only know how to cook vegetables so many ways before I feel like I am repeating.
What I like best so far about Whole30 is how much it is forcing us to eat at home. We can’t fall back on just grabbing take out. We even had to turn down a dinner out with friends because after perusing the menu there was literally not one thing on it that we could have eaten without being left with a bowl of lettuce. I did have a slip up when I was out to eat for my grandma’s birthday this week, although not my fault, I ordered a salad that according to the menu was romaine, fruit, and almonds with a coconut rum dressing. I figured, easy, just leave off the dressing and have oil and vinegar on the side. When it was served to me it had a little bit of parmesan cheese grated on top. So I just dabbed as much as I could off the top with the fruit I was giving to Hadley and ate my salad.
On Thursday of this past week we hosted a dinner party for my husband’s grandma’s birthday and since I was doing all the cooking I catered it to fit within Whole30. The only thing we missed out on were the appetizers, salad, and cake. We had chimichurri flank steak, grilled chicken, roasted vegetables, and roasted red potatoes. It was delicious, filling, and spent with a whole lot of good company.
I would be lying if I said I wasn’t counting down the days until this is over. I’m looking forward to weighing myself and having a glass of wine.
